With an air shifter you shift via pushing a button. There is no manual manipulation of the shift lever by the rider. The air operated solenoid provides the force to shift. These are used in drag applications due to the rider essentially being laid in a prone position with their feet nowhere near the shift linkage. The system requires that the electronics be wired into the bike. Spark is still cut with an air shifter; the rider is just not what's moving the shift lever.

With a quick shifter the shift lever is manipulated by the rider's foot. There is a sensor installed in the shift linkage that picks up the manipulation and cuts spark allowing the trans to go to the next gear without the rider ever rolling off the throttle. Some also have an auto-blip function that allows clutchless down shifting.
